Tartrazine (E 102) is a yellow, water-soluble mono-azo colour mainly used as its sodium salt, but also as potassium and calcium salts and as an aluminium lake. Its molecular structure is shown in Figure 2.1a. Tartrazine maintains its colour even in acidic conditions and at higher temperature.
